Nasi Kandar




INTRODUCTION:

Nasi Kandar, a popular northern Malaysian dish, is an original meal that originated from Penang. It literally means "rice on the shoulder". From as early as the la19th century, coolies who worked at the port of Penang basically survived on nasi kandar for their lunch. Nasi Kandar has come a long way since. The name has been remained and today the word “Nasi Kandar” is seen on most Tamil Muslim or "Malaysian Mamak" restaurants and Indian-Muslim stall meals. As one of Penang most famous food, we can now find it everywhere around Malaysia. It is no longer plain white rice with a single curry dish but now at a typical restaurant, there are a lot of variety of curry and types of food that being served. Patrons can choose a variety of side dishes that may include curry fish, curry beef, curry chicken, roasted chicken, boiled egg, kacang bendi (lady's fingers/okra), sotong (squid), terong (brinjal/aubergine/egg plant), and fish roe.

METABOLISMS INVOLVED:

Carbohydrate Metabolism

The main source of carbohydrate in Nasi Kandar comes from rice. Carbohydrates are made up of carbon, hydrogen, and oxygen atoms and they are classified as monosaccharides, disaccharides, and polysaccharides by depending on the number of sugar units that they contain. Carbohydrate metabolism begins with glycolysis, which releases energy from glucose or glycogen to form two molecules of pyruvate in which the pyruvates enter the Krebs cycle, an oxygen-requiring process, through which they are completely oxidized. Before the Krebs cycle can begin, pyruvate loses a carbon dioxide group to form acetyl coenzyme A (acetyl-CoA). This reaction is irreversible and has important metabolic consequences. The conversion of pyruvate to acetyl-CoA requires the B vitamins. The hydrogen in carbohydrate is carried to the electron transport chain, where the energy is conserved in ATP molecules. Metabolism of one molecule of glucose yields 31 molecules of ATP. The energy released from ATP through hydrolysis can then be used for biological work. In the liver and muscles, most of the glucose is changed into glycogen by the process of glycogenesis. Glycogen is stored in the liver and muscles until it is needed when glucose levels are low. If blood glucose levels are low, then epinephrine and glucagon hormones are secreted to stimulate the conversion of glycogen to glucose. This process is called glycogenolysis. (Gita Patel, 2008)


Protein Metabolism

The major source of protein in Nasi Kandar comes from fried chicken and fried squids as seafood is high in protein too. Proteins contain carbon, hydrogen, oxygen, nitrogen, and other atoms such as sulphur. Protein is digested and broken down into amino acids. If amino acids are in excess of the body's biological requirements, they are metabolized to glycogen or fat and subsequently used for energy metabolism. If amino acids are to be used for energy, their carbon skeletons are converted to acetyl-CoA, in which the acetyl-CoA enters the Krebs cycle for oxidation, producing ATP. The final products of protein catabolism include carbon dioxide, water, ATP, urea, and ammonia. Transamination reaction is the reactions that transfer the nitrogen from one keto acid to another keto acid. It converts L-glutamate to form ammonia which is used for the synthesis of urea. Urea is transferred through the blood to the kidneys and excreted in the urine. (Gita Patel, 2008)

Fat Metabolism

The major source of fat in Nasi Kandar comes from fried chicken. Fats contain mostly carbon, hydrogen and oxygen atoms. The three main forms of fat that found in food are triglyceride, the phospholipids, and the sterols. Triglyceride is the form in which the fat is stored for fuel and sterol is commonly referred to cholesterol. The main pathways of fat metabolism are lipolysis, beta-oxidation, ketosis, and lipogenesis. Lipolysis and beta-oxidation occurs in the mitochondria. It is a process in which two carbon atoms are removed from the fatty acid per cycle in the form of acetyl-CoA. The acetyl-CoA will then proceeds through the Krebs cycle to produce ATP, CO2, and water. Ketosis occurs when the rate of formation of ketones by the liver is greater than the ability of tissues to oxidize them. It occurs when large amounts of fat are eaten in the absence of carbohydrate. Lipogenesis occurs in cytosol. It is a process in which the fatty acids are derived from the hydrolysis of fat as well as from the synthesis of acetyl-CoA through the oxidation of fats, glucose, and some amino acids. PHYSIOLOGICAL BENEFITS:

In nasi kandar, rice is for the ingestion of a large number of carbohydrates among those ingredients and there is around 76.1% carbohydrate are come from the rice. The function of carbohydrates is to provide energy for the body, especially the brain and the nervous system. Sugars and starch act as the perfect fuel that enable us to carry out our physical activities efficiently and effectively for instant energy generation. It is an excellent source of energy for the many different activities going on in our cells. In fact, carbohydrate is one among the three prominent macronutrients that serve as excellent energy providers, the other two are fats and proteins. Carbohydrate foods are low in calories and high in fiber. (Emory University, 2008) Fiber can keep our bowel function going smooth, because it increases the number of bowel movements per day and improves the ease with which a stool is passed. Besides, fiber can help in weight control, diabetes, and prevent heart disease. (Marks, J.W., 2009)

Rich protein foods in nasi kandar are fried chicken and fried squid. Protein can act as antibodies which involve in defending the body from antigens, a contractile protein which involve in muscle contraction and movement, and an enzyme that facilitate biochemical reactions. Moreover, it is for growth and repair of body tissue of the body. (Wikipedia, 2009)

Fried chicken is the main ingredient which provides the fat in nasi kandar and it is around 59.8% of the total fat. Fats are a compound known as lipids. It provides the most important reservoir of stored energy as adipose tissue. In addition, fats also function as the transportation and use of vitamins A, D, E, K, and for other substances which are fat soluble. Those vitamins would not be able to function if without fat in the diet. The other functions of fats include protection for the vital internal organs, prevent loss of body heat, provide the covering for nerves, production of hormones to regulate and initiate body activities. MODIFICATIONS OF NASI KANDAR:

If we assume that a female eat 3 meals per day, then the amount of the total energy, carbohydrate, protein and fat should be divided into 3 (33.3%) from the Recommended Nutrient Intakes (Table 2). The Recommended Nutrient Intakes per meal for Female is recorded on Table 3.

From the table 1, we can know that the total energy, protein and fat are more than the Recommended Nutrient Intakes per meal for Female on Table 3, especially the protein consumption, because it is already more than a requirement of RNI daily for protein by eating one meal only. If we eat one meal then can get the whole day protein, we will get the protein toxicity easily because we are impossible to eat a meal without protein. The reason is because every food must contain protein whether it is contain more or less only. Protein toxicity will result to the kidney disease, diabetes, heart disease and long term untreated high blood pressure. (Wikipedia, 2008)

Therefore, we must modify nasi kandar in order to let the human being get maximum benefits and try to reduce the adverse effects of nasi kandar. Actually we can evaluate that nasi kandar is harmful to human being if we didn’t modify it. Table 1 showed that the total carbohydrate per meal is lower and the others are higher. Hence, we should try to lower the total energy, protein and fat. On the other hand, make the total carbohydrate higher. The rice and okra will be no change at all. We can choose boiled egg to eat rather than choose fried egg. The reason is because the energy, protein and fat are much higher in fried egg than boiled egg. Our purpose to modify nasi kandar is to lower these three things and let carbohydrate intake become higher. Boiled egg is totally suitable for our modification.

Apart of the selection of egg, the most important ingredient is chicken. Which part of the chicken should we choose? We can refer to the nutrient database according to NAL, 2009 and those values are recorded on Table 4. In fact, the chicken breast is the best part for us to choose because it is low in energy, carbohydrate, and fat while high in protein. Unfortunately, it is a bad choice for us to choose if we add into the side dishes of nasi kandar, because we need to make carbohydrate higher and protein lower. The protein inside chicken breast is too high, we will get protein toxicity faster. So, this is testing our experience. According to my experience and knowledge, I think chicken thigh is the best part for us to eat with nasi kandar. I do not choose chicken wing because the energy and fat content are too high. I only can choose between chicken thigh and chicken drumstick. These two parts, the energy, protein and fat are almost the same, not different very much. Therefore, the main point is the carbohydrate. Ladies and gentleman, you all still remember the carbohydrate intake for nasi kandar should be lower or higher? Yes, the answer is higher for carbohydrate. So, ladies and gentleman, which parts should we choose between chicken thigh and chicken drumstick? Yes, of course chicken thigh, because it got a higher carbohydrate.

Fried squid is a type of seafood, normally seafood is contains a high energy and protein. For the modification of nasi kandar, I am strongly disagreed the consumer choose fried squid as side dishes and I hope consumer can choose cabbage to replace fried squid. The fried foods are consider as unhealthy foods, the chicken is fried already then we do not choose second fried foods is a better decision, we cannot ignore our healthy and eat whatever we like to eat, we must consider the nutritional composition and follow the food guide pyramid. According to the food guide pyramid, there are more servings we should eat at vegetable group than meat group per day. Hence, we should choose another vegetable to eat, and I suggest cabbage replace fried squid because cabbage contains no fat, low in energy and protein.

The last thing we can modify for nasi kandar is the curry. Generally, the cooker will use coconut cream to cook the curry. In compare, coconut milk is better than coconut cream. Although they two got saturated fat, but coconut cream contains much more saturated fat than coconut milk. After modification, all prominent macronutrients and energy are improved. The total energy, protein and fat are decrease; total carbohydrate is increase. Even though the total protein required still high but the important thing is it got improve already. Although we cannot modify it become the best, but it is the maximum benefit and we reduce the adverse effects already. The nutritional composition of modified nasi kandar is recorded in Table 5.

CONCLUSION:

A healthy life is come from the healthy diet every day. We must always make healthy food choices and take care about our healthy lifestyle. In conclusion, nasi kandar became a healthier food after modified it, so I hope everyone can take my advice and choose the side dishes which I suggested and modified.

Maybe your suggestions to modify the nasi kandar is taken note of health, but it's not necessary to remain the same taste as it is delicious as before after modification, so what would you do to maintain the taste, and at the same time, you shall take care of our health?

    I will promote the modified nasi kandar as the healthier nasi kandar without change the taste,flavour or texture,it is just be careful to choose the side dishes.

    In the modified nasi kandar,that's right Im concern about the effect of nasi kandar to the healthy of human being,but I didnt change the taste.Those side dishes still cook by the same way and same ingredients,so it is no effect to the taste.The taste is remained after modified it.

    Actually,Kai Teng still not very clear about the modification of nasi kandar.The whole modification,I am concentrate on the way of choosing those side dishes.I didnt change anything on the side dishes themselves.

    For the above modification of nasi kandar,I am using some of the side dishes as discussion here.For example,I am using chicken as main side dish.In fact,there are still got another 4 main side dishes (fish,lamb,beef and pork).All of these contain different energy,carbohydrate,protein and fat.Besides,brinjal,fried prawn,and fish roe also can be added into it.The chicken can choose fried,curry,or roasted.So there are many possible for us to choose.But I am choose some of them for modification.

    The possible can be:the fried prawn replace fried squid,brinjal replace okra,roasted chicken replace fried chicken,fish roe replace fried egg.Once some side dishes replace some side dishes,the nutrient intake is become different already.Then I need to calculate again about the nutrient intake like that is healthy or not.

    As a nutritionist,I can help you all to modify the healthier nasi kandar specially for you alone only.Your own nasi kandar,prepare specially and consider depend on your BMI,your healthy status and your preferable foods.

    Ya,you can choose the fish as side dish for your nasi kandar.I do a research for the differences between chicken and fish in terms of nutrients already.I choose four types of fish for compare with chicken and teach you how to choose the fish.But,I don't know whether the shop is selling the fish which I choosen as side dishes or not.
    In fact,fish is healthier than chicken because of the omega 3.There are no omega 3 inside the chicken.Omega 3 can include ALA,DHA and EPA and all of these cannot be synthesized by human body.Consumption of EPA and DHA may reduce the risk of coronary heart disease,promote healthy vision and brain development,decrease the risk of delivering a preterm and low-birth-weight baby for pregnancy woman.There are many advantage of this omega 3 of fish which cannot be found in chicken.Unfortunately,there is one nutrient that fish cannot provide is carbohydrate.Normally,they are very low in carbohydrate and almost is zero.

    The four fish I choose are salmon,herring,mackerel,and pike.

    Salmon:
    Energy=149kcal,carbohydrate=0g,
    protein=25.56g,fat=4.42g,Omega-3=1.4g

    Herring:
    Energy=203kcal,carbohydrate=0g,
    protein=23.03g,fat=11.59g,Omega-3=1.7g

    Mackerel:
    Energy=262kcal,carbohydrate=0g,
    protein=23.85g,fat=17.81g,Omega-3=2.2g

    Pike:
    Energy=113kcal,carbohydrate=0g,
    protein=24.69g,fat=0.88g,Omega-3=0.1g

    We also can differentiate the benefit of chicken and fish based on their energy,carbohydrate,protein,and fat.We can observe that all of the energy,carbohydrate and protein of fish are lower than chicken.The fat of some of the fish are almost same with chicken,but some of the fish are lower.So,the overall is the fish is healthier than chicken.

    All of the information above can help us to choose the right fish but it depend on what we want.Although markerel contain the most omega-3,but it is very high in energy and fat.The least fat and energy is pike,but the least omega-3 content is pike too.So I will choose salmon or herring.The protein and omega-3 between them are not much different,so we focus on energy and fat.If let me choose,I will choose salmon because it is less fat although the energy is not enough.So depend on our requirement when we choose one of the two fishes,Salmon or Herring.

  11. The above as you mentioned, i am wondering where possible nasi kandar with pork as side dish, nasi kandar usually is malay food oh... huh ?? If pork can be one of the side dish, then can you clarify the info about the pork ? i'm very interested by selecting pork as side dish..haha~~

  12. The explanation for the modified in nasi kandar is well presented. Now i can understand the modified nasi kandar is much more healthier than the normal nasi kandar. Since majority of malaysians like to have nasi kandar most of the time, with the new implementation on nasi kandar, it enable us to lead a much more healthier lifestyle.

    Actually nasi kansar is not a malay food,I mentioned nasi kandar is a Tamil Muslim or Indian-Muslim food in the introduction.
    According to Christina Chin, 2006, < http://e-malabari.net/history/kandar.htm> Nasi Kandar was brought to Malaysia 70 years ago from India. The famous Penang nasi kandar an original Malaysian dish although its origins date back to the days of yore when Indian Muslim immigrants roamed the port and dusty streets of colonial Penang, lugging around heavy baskets laden with home cooked dishes and rice.At first,the nasi kandar is India type but it is change to Malaysia type now,just because to suit our local tastebuds.

    Ya,there is no pork as side dish in the shop normally.But it cannot 100% determined that every shop which selling nasi kandar in Malaysia didn’t sell the pork curry as side dish.We cannot conclude like that,because NOTHING IS IMPOSSIBLE!Christina Chin also said that Nasi Kandar is now a 100% Malaysian dish with changes made to suit local tastebuds. (Christina,C.,2006)It changed and some shops maybe want to improve their variety of the food choice in their shop and sell pork curry. In Penang, there are 41.8% of Chinese,40.5% of Malay,and 10.4% of Indian.There are majority of Chinese live in Penang,maybe the Indian want to earn more and prepare the pork curry for the Chinese specially since Chinese is quite like to eat pork.So I want to conclude that everything is possible to happen in this world,there is no pork curry in KL,but it doesn’t means that no pork curry at other places.I really search one website which provide the information of pork curry is present in one shop,but I can’t find out the website since it is found out long time already.

    Nowadays, the Pork is Leaner. Through changes in feeding and breeding techniques, pork producers have responded to consumer demand for leaner pork.Today's pork has 16 percent less fat and 27 percent less saturated fat than 15 years ago. Many cuts of pork are now as lean as skinless chicken.The USDA has analyzed pork for trans-fatty acids.The results confirm that pork contains no artery-clogging trans-fat. Pork today compares favorably for fat, calories and cholesterol with many other meats and poultry. While providing a greater amount of vitamins and minerals, many cuts of pork are as lean or leaner than chicken. Pork steaks or roasts from the leg ("fresh ham") are also lean choices. For example:Trimmed pork tenderloin and skinless chicken breast have the same amount of total fat content.

    I use skinless chicken thigh and pork bone-in sirloin roast to compare with each other.

    Skinless chicken thigh:
    energy=177kcal,saturated fat=2.6g,
    total fat=9.3g,cholesterol=81mg

    Pork sirloin roast:
    energy=173kcal,saturated fat=2.4g,
    total fat=8.0g,cholesterol=76mg

    In compare,the energy,saturated fat,total fat,and cholesterol of pork is lower then chicken.So it is obviously for us that pork is better than chicken based on their energy,prominent macronutrients and cholesterol.

Wow~ based on your info, pork is better than chicken obviously, the energy, cholesterol and fat are lesser than chicken which mean much more healthy and these are really unexpected. Next time if i eat nasi kandar in somewhere, I will strictly choose pork as side dish but i hope there got some places which are selling nasi kandar with pork curry in Kuala Lumpur ..hehe :):)

    From all of the side dishes,I can conclude that all of the foods contain vitamin and mineral.

    I give an extra knowledge for everyone.
    I use vitamin C as example.
    For example:Vitamin C,only need 70mg/day for an adult,the tolerable upper intake (UL) is 2000mg/day.It is very easy to get 70mg/day and difficult to get toxicity which excess 2000mg/day.

    From the 6 foods above,I specially showed the vitamin C value of each food.I add all of the value and the total value for vitamin C is 43.1mg/meal.If we multiply 3 meals per day is 129.3mg/day.It is really easy for our body to consume enough vitamin.Besides,it is for mineral too.Toxicity is 2000mg/day.There is a huge range between 129.3mg and 2000mg.

    So,nutritionist is focus on macronutrients and not micronutrients.

    You did not mention the alternative way after your modification, you didn't even tell us who is your target group of your modification, you need to show how you balance the taste and the nutritional profile of the food. In short, it is an EYESORE, a waste of time.

    Good explanation on the nutrition value on nasi kandar. Didn't expect it to be so complicated though. However, that's fact, and it can always be complicated when fact is involved.

    The thing is, whenever a food taste better than usual, the chances are that it would not be good for health. That's the problem eh? Either one would choose more taste and forgoes health, or vice versa.

    Sometimes people aren't aware of the nutritional fact of foods. Sometimes even those food that are branded as 'healthy foods' aren't as healthy as people think they are. There's a possibility that it could be worse that some junk food.

    Anyway...

    Verdict - A better work can be done here. As the anonymous above had said, this blog really gimme a feeling of reading textbook. Facts can be boring, but it can be make interesting with a little tweak in it. The way you're writing this makes me feel that wikipedia looks more interesting. C'mon, you should be able to do a better job that this!

    By the way, good job though. At least u tried hard to search the facts to support your explanation, eh?

    The fat is mainly consume from fried chicken.If you want to gain fat,you can choose 2 fried chicken to eat,but it also increase the protein and get protein toxicity easily since the fried chicken contains so many protein.I will not suggest you to do like that,because healthy is more important than gain fat.You can use another healthier method to gain fat rather than use nasi kandar.

Please tell me if you hate someone, what you can obtain from the hateness? There are only the negative feelings accompany you always. Yet, I don't know why you said I hate my lecturer, but I think you are the person who hates him very much, not me. Please don't give any injustice to me. IF my article doesn’t have any English grammatical errors, then I will prefer being English lecturer rather than studying food science.

    You ask me to mention the alternative way after my modification, the target group of my modification, the balance of the taste and the nutritional profile of the food?? Please consider my situation, my lecturer not allow us to write more than 1000 words in this assignment, do you think I could write down all the things that you requested within 1000 words? Come on, think about it, this is impossible. Moreover, I am not doing a thesis about Nasi Kandar.

    I didn't force anyone to do so, I used to play fool with my friends. I just give my suggestion to everyone. If you hate my blog, you can just ignore or leave it.   29. We know that,regular meal is important to everyone.We like to eat delicious meal such as laksa,fried chicken~but normally this kind of food are rich in unhealthy element,it cause us become fatty and face healthy problem.
    Nasi kandar a food that delicious,althought it is got the unhealthy element but through your blog i find out that nasi kandar can become healthy food for everyone,it is a very good new to the people whose scare fat!

Nice article. thanks for sharing such good info. this let me know more about nasi kandar as i really like to eat this typical malay food. but here, if can, i would like to know whether it is suitable for people who have diabetic and hyperlipidaemia as you'd written there there was high content of chols and fat in the chicken and also the paste, and since carbohydrate would finally convert into glucose, this might elevate our body sugar level. If i'm a diabetic patient, would this further increase my blood glucose level? Um... i just asking because my uncle who is a nasi kandar 'lover', but he's also a diabetic people and he's overweigh and his GP had diagnosed him to have high risk of developing IHD with his high chol level. It's be my pleasure if you can answer my question. Thanks so much. Anyway, this is really a very good article to let people who do not care much about our diet to know this in order to take good care of our health. Cheers...

  40. Firstly, it is a very informative and very lengthy detail explanations on human metabolism in respect to nasi Kandar. It is good to have detail explanation, but KISS (Keep It Short and Simple / Keep It Straight and Simple). Although most of the information are referencing from other sources, as for the alternative modified Nasi Kandar, I can see traces of effort and understanding being demonstrated in this section. At least, this is the main context of this article is concerned, right? Again, keep the context simple and organized. And I can see she has put in effort in replying question posted and making suitable and appropriate suggestion to some of the constructive enquiries.

    One more point I need to point out is, there is no relational links between proficiency in English writing or grammar and the demonstration of understanding of the presented topic. Meaning, not well-grammatical written English article does not necessary affects on her understanding of the presented topic. Thus, it is pointless to pinpoint any grammatical error here. On the contrary, I found that she had demonstrated a strong understanding of nutritional value of each new ingredients and led to several modified Nasi Kandar.

    Lastly, well done and good luck for you.

    -Hahaha! Are your characters good? Ask yourself please. Talking people bad ain’t a good thing also. Look at the mirror then you’ll know how ugly are you. I am glad and thankful that you know kai shien has a lot of friends who’s always supporting her as she really, really put her best effort in answering and suggesting question posted. I knew she had spent at least 30min or more than that to do the research in order to replying each of the questions that we posted. Let’s recall back the previous comment that I posted, I asked her about the nasi kandar is malay food, possible pork can be the side dish? (I am purposely making a joke with her, who knows...) After that, she used about 2 hours to do research and found out the website where she has read in somewhere before to prove it she is correct. I really appreciate that she is trying to give us the best and useful answer. Even though she knew the question is trying to trick her, but she still did her best job and careless about the fool.

    That is enough for me. Who don’t have hatred? Haizz...I am sure you(anonymous kids) are envy here because nobody visits your blog or even drop comment, your poor thing. I suddenly sympathize to you.

Secondary hyperlipidaemia can be due to diabetes.Ischemic heart disease (IHD) is a disease characterized by reduced blood supply to the heart muscle, usually due to coronary artery disease (atherosclerosis of the coronary arteries). Its risk increases with age, smoking, hypercholesterolaemia (high cholesterol levels), and diabetes.

    As you mention, carbohydrate would finally convert into glucose, this might elevate our body sugar level but insulin can’t function properly and this cause diabetes.Besides,if a person always eat the high fat diet will cause hyperlipidaemia and relate to the IHD.Your uncle is overweight and the BMI is between 25-29.Actually all of the things is relate to each other.High fat & carbohydrate diet and obesity can cause diabetes, hyperlipidaemia, and IHD.

    The modified Nasi Kandar is low in carbohydrate and fat.Actually is suitable for your uncle and not affects those diseases getting worse.But I hope your uncle can eat mild foods such as vegetables and fruits rather than this type of foods. A lifestyle improvements– smoking cessation, weight reduction, healthy eating (reduced intake of saturated fats and cholesterol) and regular physical exercise can help the patients who suffer from diabetes, hyperlipidaemia, and IHD.

So, what's the remedy for u is, guys, think of a good reason to explain why would this anonymous's judgment is wrong and force her to consider disconfirming information(Koriat & others, 1980). Or maybe, anonymous wants to be different, tt's y she purposely rebels when we are giving her apparent pressure because we all are giving supports to kaishien, this is called reactance, so that she could values her sense of freedom and self-efficacy (if u want to know what is self-efficacy, u can come to me).
